Tasty Thursday - Slow Cooker Carnitas

I have been working on my cookbook recipes and I have one ready for you to try! It is called Slow Cooker Carnitas. Carnitas is Spanish for "small meats" and is a type of braised or roasted pork in Mexican cuisine. This recipe is not the traditional way to cook carnitas and has my own personal touches to it. I hope that you enjoy it as much as my family does! You can read more about carnitas as well as ways to cook the pork here.

You can use this meat for just about anything in your imagination - burritos, tacos, quesadillas, tostadas; serve the carnitas with any type of tortilla, grilled vegetables, fresh tomatoes and sour cream or guacamole to make a type of fajita. You can also use it in my Mexican lasagna dish and it makes a delicious addition to refried beans to make your cupboard stretch.

3 lbs of boneless pork shoulder
1 sixteen ounce can of green chile enchilada sauce
1 teaspoon of fresh ground black pepper (or 2 teaspoons of regular ground black pepper)
1 tablespoon of garlic powder
1 tablespoon of onion powder
1 teaspoon of salt
1 teaspoon of dried cilantro leaves
1/4 teaspoon of cumin

Combine all seasonings and green chile enchilada sauce in a small bowl. Place pork in your slow cooker, then pour mixed green chile sauce over the top, making sure to cover all of the meat. Cook on low for 8-10 hours. When you are ready to serve, shred the meat with a fork.

Once your meat is done, you can serve in many different ways. I recommend taking half of the cooked meat and freezing it to be used later. The other half can feed a family of four about 10-12 meals, depending on how you serve it.

We used ours as fajita-type meals, burritos, tacos, and tostadas. For the burritos and tostadas, we also mixed some of the meat with refried beans. You can also make up some rice and use that with the meat and beans in your burritos. We did freeze half of the meat. If you do that, then once you are ready to use it again, just take it out of the freezer in the morning and let it thaw in your refrigerator all day. Then, once you are ready to use it, you put it in the microwave for 3-4 minutes on high (depending on your microwave), and then use as you see fit!

Keeping Busy - Friday Summer Fun List

Summer is here; schools have let out; kids are home and bored. What is a mom to do?

Well, I have some activities that will not only be fun or entertaining, but your children could learn something new. Hey, even you could learn something new!

1. Try a children's museum for kids under 10-ish or a regular museum for older children. A children's museum is where kids can touch, climb, splash, crawl, push, pull, and press just about everything there.

2. Visit the local zoo, if you have one near you. I can't tell you how much my kids LOVE going to the zoo and seeing all of the animals. Try going in the early morning or late afternoon to see the animals being active. Most of the animals will sleep during mid-day, especially in the summer.

3. Try planting a garden from seed. Even if you only do a couple of pots, kids love watching things grow. For instance, if you take about 5-7 pinto beans, a glass jar and some paper towels, your children can watch the beans sprout, take root, and put out leaves without having the dirt in the way. All you need to do is wad the paper towels up, put them in a jar, put the beans in different little "pockets" of the paper towel and then mist the paper towels with water. Keep the towels fairly moist and in no time, you will see the beans sprout.
